Probably much closer to &quot;authentic Bolognese&quot;, and even better if you can find Guancale or Lardo... &lt;br/&gt;&lt;br/&gt;Niman Ranch makes excellent Pancetta, if you can find somewhere that carries it... &lt;br/&gt;&lt;br/&gt;I also suggest treking over to the Italian specialty food store in Chelsea Market. I&#039;ve only had their proscutto - which is sublime compared to anything else I&#039;ve ever found in this city - and I&#039;m betting their pancetta is equally as delicous...</description>
